New Yaletown bakery Bake49 to serve Japanese cheesecake and other sweet treats

      Fans of Japanese cheesecake have reason to celebrate: A new European-Asian bakery is coming to Yaletown.

      Bake49 is expected to open any day now at 1066 Mainland Street.

      Headed by Iljin Kyung and Haram Lee, the spot will feature croquant choux, a crunchy, textured choux pastry filled with vanilla-bean custard creme; Japanese cheese tart, a double-baked tart shell filled with fluffy, gooey cream-cheese mousse; and double-fromage cheesecake (which has a baked bottom layer and a top layer of no-bake cheesecake).

      It will also serve organic soft-serve ice cream and cold brew by 49th Parallel.

      “All items are hand-crafted from scratch and baked fresh daily,” says Kyung, who trained with pastry chefs in Korea before launching his venture. “Our long-term goal is to bring Euro-Asian inspired, high-quality pastries, breads, and desserts to Vancouver, starting out with a humble, mini location in Yaletown first.”
